White Heather 21 Years

In 2021, BILLY will pay tribute to its roots in the industry with the relaunch of WHITE HEATHER BLENDED SCOTCH WHISKY, a limited edition twenty-one year old. Drawing on nearly half a century of experience, he has sourced the finest grain and single malt whiskies from across Scotland and blended them in the GLENALLACHIE distillery laboratory. With an emphasis on care and attention to detail, Billy created a recipe with a particularly high malt content, taking the quality to a new level.

 The whiskies began their first 18 year journey with a combination of American oak casks and 1st and 2nd fill sherry. Once blended, the spirits were conditioned for a second three-year maturation in specially selected Pedro Ximénez and Oloroso casks, as well as in medium toasted Appalachian virgin oak barrels. As the whiskies blend, they also interact with the wood, enriching the taste experience.

The quality of the vintage whiskies we blend is just as important as the quality of the wood. Each single malt brings its own unique characteristics; GLENALLACHIE brings rich, fruity notes, ISLAY malt subtle peaty notes, and HIGHLANDS malt a honeyed sweetness. The older grain whiskies are the rich, bold bases that provide an extra layer of complexity.

NOSE: A sweet heather honey scent in the background, butterscotch, peat and tannins.

TASTE: Rich notes of heather honey, butterscotch, orange peel and sweet tannins, with a wonderful peat and smoke presence.
