Their own Olympus barley variety, grown on their farm's Railway plot at an altitude of 79 metres.
- Yield 8.45 tonnes per hectare, grain moisture content 18.5%
- Malted in Inverness (Scotland) on 05/06/2017
- 42 tonnes brewed in 13 batches, fermentation 72 hours.
- Triple distilled by Stuart Nickerson (the house Maestro and father of the boss) in the facilities of an Irish colleague.
- Matured on the farm in first fill Rioja casks.
- Non-chill filtered, uncoloured.

NOSE: It's a bit off the beaten track on the nose, there's something cereal-like, something toasted, even roasted... A bit like a good stout, but without the bitterness! You can also detect a mixture of spices coated with sweetness.
PALAIS: It's round, even sweet... sweet oak? There's also a little red fruit, it's creamy, the maturation in wine barrels is not hidden, we can perceive some soft tannins!
FINISH: On the finish, we find something more classic with spices (black pepper, nutmeg) ... but always this sweetness, these red fruits coated with sweet tannins.
