    Scientifically distilled to 022 parts 'peat' and 019 parts 'sweet', then 'micro-matured' to achieve a precise balance between oak sweetness and smoky notes, this award-winning single malt pushes the boundaries of flavour.

    PPM: This is the precise measurement of phenol content in parts per million. The higher the phenol content, the more peaty the whisky tastes. AILSA BAY contains 022 ppm, which is assessed before bottling, ensuring a more accurate measurement.

    SPPM: AILSA BAY is the first whisky for which a measure of sweetness has been identified. This is achieved through a revolutionary process defined by Master Blender Brian Kinsman. The whisky holds 019 SPPM, giving it the perfect balance of peat and sweetness.

    MICRO-MATURATION: AILSA BAY is also the only scotch whisky to undergo a process called "micro-maturation". The distillery's newly produced spirit is first placed in Hudson Baby bourbon casks, ranging in size from 25 to 100 litres, for six to nine months. These relatively small casks allow for rapid and intense maturation compared to traditional American oak casks that can hold up to 200 litres of alcohol. The liquid is then transferred to virgin American oak barrels, which are first filled and reused for several years. This process is the first of its kind in the Scotch whisky industry. 

     

    NOSE: Fresh wood smoke with notes of smouldering wet heather and extinguished pyre. The smoke is followed by a wave of vanilla oak and candied orange peel sweetness.

    PALAIS: Beautifully balanced medium peat and rich, vanilla oak. This second batch has retained the same intense flavour that oscillates between smoke, fruit and creamy toffee. This additional maturation period developed deeper toasted oak notes with each sip. Lots of potential
