Lowland Single Malt Scotch Whisky (48.9% 70cl)
TheAilsa Bay Sweet Smoke 1.2 – 48.9 % is a Single Malt from the Lowlands produced by the Ailsa Bay distillery, owned by William Grant & Sons. It has precisely 022 PPM of peat and 019 SPPM of sweetness, a measure developed to quantify the balance between smoke and sweetness. It also benefits from a particular process of micro-maturation: the distillate first spends six to nine months in small Hudson Baby bourbon casks of 25 to 100 litres, before being transferred to virgin American oak casks, first fill and reused for several years.
NOSE : Fresh wood smoke with notes of smoking heather and extinguished log. The smoke is followed by a wave of sweet vanilla oak and candied orange peel.
PALATE : A beautifully balanced medium peat and rich, vanilla oak. An intense flavour that oscillates between smoke, fruit and creamy caramel. Deeper notes of toasted oak develop with each sip.
FINISH : A remarkable balance between the sweetness of the oak and the dryness of the peat.
