Starward Octave Barrels

The Yalumba Octavius is an extremely rich Shiraz (also not priced for all pockets) that has been aged in 100 litre "Octave" casks. They claim to be the only red wine producer working with such large barrels. It is precisely these old 'octaves' that have been used to create the limited edition Starward Octave Barrels.
The 'octaves' were filled with the new make Starward almost immediately after being emptied. This ensures an intense exchange with the enchanting Shiraz, giving this 48% Starward Octave Barrels a very complex and generous profile.
Nose: Rich notes of red fruits, sultanas, peach, toffee and toasted oak.
Palate: Opulent with forest fruits and a nice vanilla woodiness.
Finish: On marshmallow caramelising over a campfire.
